A thick, glossy glaze made with Balsamic Vinegar of Modena PGI, selected by Martin-Pouret, master vinegar makers in Orléans since 1797. Sweet and tangy, it stays put in lines or dots without running. Use it on tomato and mozzarella, a carpaccio, a risotto or strawberries.

Description
This balsamic glaze carries the Martin-Pouret name, a vinegar house based in Orléans since 1797. It is not made in Orléans: the bottle states that it is produced and bottled by Compagnia del Montale in Modena for Martin-Pouret. The base is Balsamic Vinegar of Modena PGI, at least 39% of the recipe, extended with cooked grape must and wine vinegar, then thickened with maize starch. The 150 ml squeeze bottle holds 185 g net.
Thicker than a balsamic vinegar, it holds its shape on the plate: draw a line or dots with the nozzle and it does not run. It finishes a tomato and mozzarella salad, a beef carpaccio, roast asparagus, a burrata or a parmesan risotto. It also goes with seared foie gras, a duck breast or shavings of aged cheese. For dessert, a few drops are enough on strawberries, roast figs or vanilla ice cream. With 46 g of sugars per 100 g, its sweetness balances the sharpness of the vinegar.
