Description
Martin-Pouret has been a master vinegar maker in Orléans since 1797. Its Orléans mustard, recognised by royal decree according to the label, starts from French mustard seeds ground with a millstone, Guérande salt and Orléans vinegar. This tarragon version adds shallots, 5% tarragon and pepper. In the jar, the yellow paste is flecked with bran and green leaves; the tarragon brings an aniseed note that softens the heat.
It goes with a grilled rib-eye, cold roast veal or roast chicken, and belongs in a French rabbit-in-mustard stew. A spoonful in homemade mayonnaise gives a sauce in the spirit of béarnaise, with no reduction or clarified butter, for chips or poached fish. It also lifts a vinaigrette for a warm potato or lentil salad, and devilled eggs. In hot dishes, stir it in off the heat at the end so it keeps its strength.
The glass jar holds 170 g. Once opened, keep it in the fridge to preserve the strength and freshness of the mustard. It contains mustard and sulphites. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
