Description
These pickles come from Martin-Pouret, master vinegar maker in Orléans since 1797, who developed them with chef Chloé Charles. The red cabbage is finely shredded and jarred with French mustard seeds in a brine of water, the house red wine vinegar and cane sugar. Cabbage makes up 33% of the jar and mustard seeds 3%. The glass jar holds 180 g, or 60 g of drained vegetables, and the pickles stay very light: 11 kcal per 100 g.
The red wine vinegar gives a clean sharpness, softened by a touch of sugar; the cabbage keeps its crunch and the mustard seeds pop between the teeth. Drained, they bring colour and bite to a burger, pulled pork, a pastrami sandwich, tacos or a poke-style rice bowl. They also go with a charcuterie board, goat's cheese or smoked fish. The leftover brine makes a good base for a vinaigrette.
