Description
These Maison Pécou chocolate dragées, from a confectioner based in Montauban since 1880, have a centre of 70% dark chocolate, moulded into an almond shape and coated in sugar. Chocolate makes up 45% of each dragée. The final layer is a silver colouring that gives them a polished metal look: this is the house's Décor range, in medium size and extra grade. The 500 g cardboard box has a window so you can see the dragées.
Unlike an almond dragée, the centre is soft and holds no nut, which children like. The silver finish makes them first of all a decoration: stick them on a choux croquembouche, set a few on a yule log, an entremets or party cupcakes, or fill favour boxes for a wedding, a christening or a silver anniversary. They can also be served as they are with coffee. Add them to a dessert at the last moment: moisture from a cream dulls the silver coating.
Keep the box dry and away from heat. The dragées contain soy and fish gelatine, and may contain traces of almond and hazelnut. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
