Description
These dragées come from Maison Pécou, a confectioner based in Montauban since 1880. Their centre is not an almond but an extra dark chocolate with 70% cocoa, moulded into a dragée shape, which makes up 65% of the weight. It is covered with a thin, smooth sugar shell, coloured poppy red with carmine and curcumin, then polished with carnauba wax and beeswax. Under the crisp sugar, the chocolate melts with a clear bitterness, far from milk chocolate dragées.
The 1 kg box, with drop-shaped windows, is made for large gatherings. Put five dragées in each favour box, tulle pouch or wedding, christening or communion container; this bright red works with a red and white or red and gold table. They also go in a bowl on a party buffet among the petits fours, or as decoration on an entremet, a croquembouche or a choux crown. They are good with coffee at the end of a meal.
Keep the box somewhere cool and dry, away from light and heat, which would dull the colour and melt the chocolate. You will also find them in our shop, 58 rue Tiquetonne, Paris.
