Description
These dragées come from Maison Pécou, a confectioner founded in 1880 in Montauban and awarded the French Living Heritage Company label, whose logo appears on the label. The centre is not an almond but 70% dark chocolate, moulded into a dragée shape, making up 65% of the weight. It is coated in a thin sugar shell, coloured with carmine and polished with carnauba wax and beeswax. "Séduction framboise" refers to the pinkish-red colour of the shell: the recipe contains no raspberry.
The 70% chocolate balances the sugar of the coating. The shell cracks, then the chocolate melts slowly. Enjoy them with a coffee, at the end of a meal, or set out in a small dish on a party table. For a christening, a wedding or a communion, they fill favour boxes, tulle bags and dragée boxes, alone or mixed with other colours to suit the theme. They also decorate the top of a gâteau or a croquembouche.
Keep the 250 g bag in a cool, dry place, away from heat that would melt the chocolate and dull the shell. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
