Description
This woodland mix comes from Plantin, a house based in Puyméras, in the Vaucluse, and a truffle specialist since 1930. It combines two dried, sliced mushrooms: 80% yellow boletes (Suillus luteus) and 20% porcini (Boletus edulis). The milder yellow bolete adds volume and bite; the porcini brings its familiar woodland, nutty taste. The clear, resealable 500 g jar is a kitchen size for regular use.
When rehydrated, the mushrooms take on about 3.5 times their weight, according to Plantin: 10 g of dried mix gives the equivalent of 35 g of fresh mushrooms. The label says to wash and rinse them carefully several times, then cook them for 5 minutes in boiling water before adding them to your dishes. Then pan-fry them with garlic and parsley to go with meat or poultry. They also suit a risotto, an omelette, a cream sauce for beef fillet, a stuffing or a velouté. The soaking water, strained, can be used to cook the risotto.
