Description
Kaloupilé (Murraya koenigii) is a shrub native to the foothills of the Himalayas, grown in rural Khmer villages. Its leaves, known as curry leaves, have nothing to do with curry powder: they are a herb in their own right, widely used in the cooking of southern India and Sri Lanka. These come from La Plantation, a spice grower based in Kampot province, Cambodia, and a member of the World Fair Trade Organization. They are picked by hand, dried straight away at low temperature and sold whole in a resealable 10 g kraft pouch.
Their aroma is musky and floral, with a citrus note. The classic method is to drop them into hot oil or ghee with mustard seeds for a few seconds before adding the other ingredients. La Plantation suggests them with ginger and coconut milk for cooking vegetables such as aubergine, in a yoghurt, garlic and spice marinade for lamb, with moules marinières or in pita dough. They also flavour a curry paste, a lentil dhal or a soup.
