Ananas lyophilisé 150g

This pineapple comes from Costa Rica or the Philippines, depending on supply. G. Detou packs it in a 150 g bag; the label states 100% pineapple, no added sugar and no additives. The pieces are irregular chunks of pale yellow flesh, very light, that crunch and then melt in the mouth. A little fruit powder settles at the bottom of the bag; keep it for a yoghurt.

Candied pineapple is soaked in syrup; freeze-dried pineapple keeps the taste of the fresh fruit, sweet and sharp at once. Snack on it with drinks or in the afternoon, mix it into muesli or homemade granola, or crumble it over fromage blanc, a coconut milk panna cotta or rice pudding. Ground to a powder, it flavours a diplomat cream or can be dusted over a tropical fruit pavlova. On the savoury side, a few crushed pieces over a sea bream tartare or a prawn salad add crunch and a tropical note; add them at the last minute so they stay crisp.
