Fraise entière lyophilisée 150g

These strawberries are freeze-dried whole, not sliced, and range from 5 to 15 mm in size according to the G. Detou label. They come from Poland, Serbia, Egypt or Turkey, depending on supply, and are packed in a 150 g bag. The strawberries keep their cone shape, their seeds clearly visible and a reddish orange colour; a layer of pink powder settles in the bag, which is simply crumbled fruit.

At breakfast, they go into a bowl of oats, muesli or onto fromage blanc. For a children's snack, drop a handful into a glass of cold milk: they rehydrate and turn the milk pink. For baking, whole, they top a fraisier or a charlotte once the season is over; halved, they can be dipped in white chocolate or pressed into meringues before baking. Ground in a mortar, they give a powder that flavours a mousseline cream or cupcake frosting without making it runny.

Like all freeze-dried fruit, these strawberries dislike damp. Reseal the bag well after each use, keep it dry at room temperature, and use them before the date shown on the label. You will also find them in our shop, 58 rue Tiquetonne, Paris.
