Peche Tranche lyophilisée 100g

These freeze-dried peach slices are packed by G. Detou in a 100 g resealable bag. The label reads "100% peach" and gives the origin of the fruit as "Greece, Serbia, Turkey, depending on supply". Freeze-drying removes the water from the fruit by cold and vacuum: the wedges keep their half-moon shape and a pale yellow colour, with a dry, brittle texture. They have little in common with air-dried peaches, which are soft and chewy.

In baking, lay them as they are on a tart, a pavlova or an entremets right before serving, as they quickly take on moisture. Blitzed in a food processor, they turn into a peach powder that flavours whipped cream, a white chocolate ganache or a shortbread dough without adding any liquid. At breakfast, add them to granola, muesli or a bowl of fromage blanc, where they soften within a few minutes. For a quick compote, rehydrate them in a little warm water or syrup.

The bag reseals after each use: keep it tightly closed, dry and away from heat so the slices stay crisp, and use them before the date shown on the label. You will also find this bag on the shelves of our shop, 58 rue Tiquetonne, Paris.
