Description
This jar comes from La Ruche Martin, the farm of Julien Martin, a beekeeper based in Montierchaume, in the Indre, who sells his own harvest. The label states that the honey was harvested in France, in Corrèze. The beekeeper moves part of his hives with the flowering seasons, and this honey comes from hives set on the Millevaches plateau, above 900 m according to his product page. There the bees forage on alder buckthorn, bramble, dandelion, clover, willow, knapweed and other wild flowers.
This mix of flowers gives an amber honey, runny in the jar, with more flavour than acacia honey but without the strength of chestnut honey. It is an everyday honey: on buttered country bread, in yoghurt, in a thyme tisane or a hot toddy in winter. In the kitchen, a spoonful glazes a pork knuckle or roast carrots, or softens a mustard vinaigrette. In baking, it suits gingerbread, madeleines or an iced nougat.
