Pollen pellets gathered in spring by the bees of Julien Martin, a beekeeper in the Indre. Yellow, ochre or green depending on the flowers visited, they taste floral and slightly sweet. Sprinkle them on yoghurt, muesli or a bowl of fruit.

Description
This flower pollen comes from La Ruche Martin, Julien Martin's bee farm in Montierchaume, near Châteauroux. The family has kept bees since the 1960s and now runs more than 500 colonies. The beekeeper collects the pollen in spring, when the bees bring it back in large amounts, in the Indre and the Creuse; the label states it is harvested in France. It comes in a 250 g glass jar.
Bees pack flower pollen into small pellets that they carry on their legs; the beekeeper takes part of it at the hive entrance. In the jar you can see the colours of the different flowers: bright yellow, orange, ochre, olive green. The taste is floral and slightly sweet, the texture crunchy. Sprinkle it over yoghurt, fromage blanc, muesli or a fruit salad, or stir it into a spoonful of honey. It also works as a last-minute topping on a tartlet or a panna cotta, so it stays crunchy. The producer suggests one to two teaspoons a day.
Keep the jar tightly closed and dry; the best-before date is under the jar. The jar carries the Bienvenue à la ferme logo. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
