Castanha is Sabaton's chestnut dessert from Aubenas: a thick spread of Ardèche PDO chestnuts with pieces of cooked chestnut. Made without vanilla, it is eaten by the spoonful, on toast, over fromage blanc or in a tart.

Description
Castanha means chestnut in the Ardèche dialect. It is the name Sabaton, a confectioner in Aubenas, gives to this dessert made from Ardèche PDO chestnuts of the Bouche rouge variety, sugar and water, nothing else. The chestnut pulp is cooked with the sugar, then pieces of freshly cooked chestnut are added during cooking, according to the maker's product sheet, for 50 g of fruit per 100 g. With no vanilla, the recipe lets the chestnut come through. The texture is a little thicker than a chestnut spread, soft, with pieces that keep some bite.
It needs no preparation: eat it straight from the jar with a teaspoon, or on buttered toast. It goes with fromage blanc, Greek yoghurt, whipped cream or a scoop of vanilla ice cream, and fills crêpes or waffles. In baking, it makes the base of a chestnut tart, for which Sabaton gives a recipe, and works in verrines with crushed meringue and a little grated dark chocolate.
The 360 g glass jar keeps at room temperature until the date on the cap, then in the fridge once opened. You will also find it in our shop, 58 rue Tiquetonne, Paris.
