Description
Yuzu is a Japanese citrus fruit with a thick, bumpy skin, used mostly for its zest and juice. Its scent sits somewhere between lemon, mandarin and grapefruit, with a floral note. Here it is the peel that is used: cut into thin strips, then sweetened with sugar and glucose syrup. Yuzu makes up 40% of the product, and the label gives Japan as the origin. G. Detou packs it in a resealable 150 g bag under its own label.
The strips are supple, barely sticky and bright yellow. The sugar softens the natural bitterness of the peel without masking the citrus scent. In baking, chop them into a loaf cake, financiers, brioche dough or the frangipane of a galette des rois. They add a sharp touch to a white chocolate ganache, a lemon tart or a homemade panettone. Half-dipped in tempered dark chocolate, they make yuzu versions of orangettes. On the savoury side, a few chopped strips lift a fish tartare or a vinaigrette.
Reseal the bag after use and keep it dry, away from heat and light. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
