Description
Yuzu is a small, yellow Japanese citrus with a scent between mandarin and citron. Umami, a Japanese grocer in Paris, imports this powder from the Tokushima region, on the island of Shikoku, where its citrus producer spray-dries the juice. Yuzu juice makes up 23.2% of the powder; the rest is dextrin, a carrier that keeps the juice dry and free-flowing.
This is juice in powder form: it gives the taste of yuzu without adding liquid, which makes it useful for dry or delicate preparations. In macaron shells, choux pastry, shortcrust or meringue, add it with the dry ingredients without upsetting the recipe, without changing the texture, where liquid juice would. It also flavours a pastry cream, a mousse, a white chocolate ganache or a flavoured butter to serve with fish. According to the importer, it tastes of the juice without its bitterness. Measure by the spoon and taste as you go, as the pouch is small and the flavour concentrated.
Keep the resealable pouch at room temperature, away from light, heat and moisture. Once opened, keep it in the fridge and use it within 2 months. Also on the shelves of our shop, 58 rue Tiquetonne, Paris.
