Description
This yuzu powder is a powdered juice: juice of yuzu, the Japanese citrus, spray-dried on a dextrin carrier. It is made in Tokushima, Japan, by Bando Foods, and imported into France by Umami, a Japanese food specialist based in Fontenay-sous-Bois. The juice makes up 23.2% of the powder. Yuzu has a fine, complex taste between mandarin and citron; the powder keeps its scent, with no bitterness.
Its value in pastry lies in its dry form. It blends fully into mixtures without changing their texture, where a liquid juice would collapse a meringue or soak a dough. Add it to the almond and sugar mix for macaron shells, to choux pastry, a shortbread or a craquelin. It also flavours a pastry cream, a mousse, a white chocolate ganache or a flavoured butter for fish. Start with a small amount and taste before adding more.
Keep the zip bag at room temperature, away from light, heat and moisture. Once opened, store it in the fridge and use it within two months. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
