Description
Éclat lacté is the milk chocolate stick from Valrhona, the chocolate maker in Tain-l'Hermitage, in the Drôme. The chocolate has at least 39% cocoa and is made with pure cocoa butter, whole milk powder and natural vanilla extract. Each stick weighs about 4 grams and comes in its own blue and white wrapper bearing the house name. The 1 kg box holds about 244 of them and opens along a perforated tab to become a counter display.
This is the format used in cafés, restaurants and meeting rooms: a stick on the saucer of an espresso or a tea, or offered at the end of a meal with the petits fours. At home, use them on a party platter, in a welcome basket or for a children's snack. In pastry work, the stick is also a ready-made decoration, pushed into a chocolate mousse, an ice cream coupe or a verrine, paired with a dark chocolate stick for two colours.
Valrhona advises keeping the box in a dry place between 16 and 18 °C, away from heat. You will also find it in our shop, 58 rue Tiquetonne, Paris.
