Description
Bocarte is the name for anchovy (Engraulis encrasicolus) on the Basque and Cantabrian coast. These come from the costera del Cantábrico, the spring fishing season, and are canned by Conservas Zallo in Bermeo, Biscay, using a traditional method. They are not packed as salt-cured fillets like a deli anchovy: they are prepared like canned sardines, then covered with virgin olive oil spiced with cayenne pepper. The taste is milder than a salted fillet, with heat building at the finish. The tin holds 120 g, of which 80 g is drained anchovies.
Serve them as they are with drinks, laid on a slice of toasted country bread rubbed with tomato, tapa style. They top a warm potato salad, a white pizza or pasta with garlic and parsley, where the spicy oil works as the dressing. With roasted peppers or hard-boiled eggs, they make a quick starter. Keep the oil from the tin for a vinaigrette.
