Description
Bonito del norte is the Spanish name for white albacore tuna (Thunnus alalunga), caught off the Cantabrian coast during the summer season. Conservas Zallo cans it in Bermeo, a fishing port in Biscay, with olive oil and salt: tuna makes up 80% of the tin. Albacore has paler, finer flesh than the yellowfin sold as light tuna, and it breaks into flakes. This pack holds two 65 g tins, each enough for one or two people, so there is no need to open a large tin for one plate.
Drain it lightly, or keep a little of the oil to dress the dish. It belongs in a salade niçoise, a potato salad with hard-boiled eggs, a piperade, or on pintxos on toasted bread with a pepper and an anchovy. Mashed with a little mayonnaise, it fills tomatoes or devilled eggs. Mixed with cold pasta, cherry tomatoes and basil, it makes a packed lunch, and the small tin leaves no leftovers.
Keep the tins closed in a cupboard. Once opened, move any leftover to a closed container in the fridge and eat it soon. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
