Description
This Lobomar jar is packed by Conservas Zallo, a company founded in 1926 in Bermeo, a fishing port in Biscay, in the Spanish Basque Country. It holds pieces of white albacore tuna, known as bonito del norte in Spain, covered in sunflower oil and salted. The fish makes up 68% of the contents, which is 250 g drained for 385 g net. Albacore has pale flesh, milder and finer than yellowfin tuna; through the glass you can see flaked pieces in large chunks.
Drain the pieces and break them up with a fork. They go into a salad of potatoes, green beans and hard-boiled eggs, a pan bagnat, a rice or lentil salad. Warm, they work in a tomato sauce for pasta, a Basque piperade or a filling for peppers and tomatoes. Mashed with fresh cheese, a little lemon and chives, they make a tuna rillette for spreading. The neutral sunflower oil can be kept for a vinaigrette.
Once opened, keep the jar between 0 and 4 °C with the tuna covered by its oil, and eat it within 72 hours. You will also find it in our shop, 58 rue Tiquetonne, Paris.
