Description
This jar comes from Zallo, a cannery based in Bermeo, a fishing port in Biscay, in the Spanish Basque Country. It holds loins of bonito del norte, albacore tuna (Thunnus alalunga), which make up 47% of the weight, together with 27% wakame salad, a seaweed seasoned with sesame and rice vinegar. Everything sits in sunflower oil lifted with a teriyaki sauce made with soy sauce, garlic and cayenne pepper. Albacore flesh is pale and comes apart in large flakes.
Serve it as it is, cold, as a starter or on a sharing board with a few rice crackers. Spooned over a bowl of seasoned rice with cucumber, avocado and sesame seeds, it makes a quick poke bowl or chirashi with no cooking. It also goes with cold soba noodles, fills onigiri or tops a shredded cabbage salad. The teriyaki-flavoured oil from the jar can be used as a dressing.
Keep the 220 g glass jar closed until the date printed on the lid. Once opened, Zallo asks for it to be kept between 0 and 4 °C, with the fish covered by its oil, and eaten within 72 hours.
