Description
Bonito del norte is the Spanish name for white albacore tuna (Thunnus alalunga), caught by the Basque and Cantabrian fleets. Conservas Zallo, in Bermeo, Biscay, packs the loins in a glass jar, in olive oil spiced with Espelette pepper. The pepper makes up 6.4% of the recipe according to the Spanish label: it turns the oil orange and gives a clear heat, flagged by the word "picante". The jar holds 220 g, of which 150 g is drained tuna.
Albacore flesh is paler and finer than yellowfin tuna. Lift the loins out with a fork and keep them whole to lay on toasted bread with a confit pepper, or flake them over a salad of tomatoes, red onion and olives. They go with a piperade, hard-boiled eggs or steamed potatoes, and the chilli oil, kept aside, dresses a salad or a dish of grilled vegetables.
Keep the unopened jar until the date printed on the lid. Once opened, keep it between 0 and 4 °C, with the tuna covered by the oil, and eat within 72 hours. You will also find it in our shop, 58 rue Tiquetonne, Paris.
