WATER-SOLUBLE POWDER DYE STRAWBERRY 8 G

This powder food colouring from the Patisdécor brand, distributed by Cerf Dellier in Hénin-Beaumont, gives a strawberry red shade to sweet preparations. It is water soluble: it dissolves in water, so it suits creams, syrups, icings and mixtures whipped with egg whites. The colour comes from allura red AC (E129), a synthetic colouring, blended with dextrose. The small 8 g glass jar lasts a long time, as very little is needed.

In a liquid preparation, add it as it is. For a firmer paste, such as marzipan or sugar paste, dilute it first in a little water, then work it in. Diluted in boiled water or food-grade alcohol, it can also go through an airbrush. Patisdécor recommends it for creams, pastillage and baked pastries such as meringues, macarons and cake batters. The label sets maximum doses: 0.43 g per kilo for confectionery, 0.29 g for fine bakery products, 0.21 g for ice creams and desserts. Add the powder a small pinch at a time and mix before adding more, as the colour builds quickly.

Keep the jar away from heat and humidity, with the lid tightly closed. As with any product containing E129, it carries a warning that it may have an adverse effect on activity and attention in children. Do not eat it on its own.
