Description
This mint green colouring from Patisdécor, the brand distributed by Cerf Dellier in Hénin-Beaumont, northern France, comes as a fine powder that dissolves in water. Being water-soluble, it suits preparations based on water, sugar or egg whites, unlike fat-soluble colourings meant for chocolate and fats. The 8 g jar lasts a long time, because a powder colouring is far more concentrated than a gel or a liquid and adds no water to the recipe.
In a liquid preparation, add it as it is: macaron batter, meringue, royal icing, whipped cream. In a firmer paste such as marzipan or sugar paste, the label advises dissolving it first before working it in. For airbrushing, dilute it in boiled water or food-grade alcohol. Mint green gives macaron shells that soft shade between pale aqua and turquoise, a natural match for a mint and chocolate ganache. The maximum doses on the label are 0.41 g/kg for confectionery, 0.29 g/kg for fine bakery and 0.22 g/kg for ice creams and desserts: weigh it on a precision scale or work in small knife tips.
