WATER-SOLUBLE POWDER COLORANT TURQUOISE BLUE 8 G

This powdered food colouring gives a deep turquoise blue. The formula combines two colours, patent blue V (E131) and brilliant black PN (E151), on a dextrose carrier: the black darkens the blue and gives it this strong shade, far from a sky blue. It is sold under the Patisdécor brand and distributed by Cerf Dellier, a pastry supplier based in Hénin-Beaumont, in the Pas-de-Calais. The powder is water-soluble and gives a matt finish.

The label gives the method. In a liquid mixture such as cream, syrup or egg white, add it as it is. In a firmer paste such as marzipan, sugar paste or pastillage, dilute it first in a little water. For an airbrush, dissolve it in boiled water or food-grade alcohol. Use it for macaron shells, a meringue, an icing or a birthday cake. The maximum doses given on the jar are 0.47 g per kilo for confectionery, 0.30 g/kg for fine bakery and 0.22 g/kg for ice creams and desserts: a small amount is enough, so add the powder little by little until you reach the shade you want. Do not eat it neat.
