Description
Le Phare du Cap Bon is a harissa from Tunisia, made in Grombalia, in the Nabeul governorate, by SCAPCB. According to the maker, the brand's story starts in Nabeul with Om el Khir's homemade harissa, and the first tin dates from 1946, the year printed on the tube. It is a paste of hot, fresh red chilli: chilli makes up 87% of the recipe, with garlic, coriander, salt and caraway, and no added oil. The box states a dry extract of at least 14% and carries the 2019 Superior Taste Award from the International Taste Institute.
The aluminium tube lets you squeeze out just what you need, with no need to open a whole tin for one dish. As the instructions say, harissa is diluted in small amounts into a broth or a hot or cold sauce: couscous broth, chorba, shakshuka, a tomato sauce for meatballs. It also livens up mayonnaise for chips or a Tunisian sandwich, a marinade for chicken or lamb skewers, or a lemon dressing for a mechouia salad. It is hot, so start small and taste.
Before opening, keep the tube away from heat and moisture. Once opened, store it in the fridge at 4 to 6 °C for one month at most. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
