Description
Kaviari, the Paris house known for its caviar, offers these vintage sardines in organic olive oil. They are caught off the coast of Brittany, packed by hand on a set date, then covered with organic extra virgin olive oil. The underside of each tin gives the name of the boat, the port of landing, the vintage year, the production date and the number of sardines: the tin photographed comes from Douarnenez, vintage 2026, with 4 to 7 sardines.
The word vintage comes from wine. According to Kaviari, these sardines are made to age for two to three years or more: the flesh turns more tender and the flavour deepens as the oil works its way in. So you can keep a few tins in the cupboard and write the year on them. The house advises turning the tin over at least every six months to spread the oil evenly. Once opened, lay them whole on a slice of toasted country bread rubbed with garlic, with a squeeze of lemon and some fleur de sel. They also go with a creamy risotto, steamed potatoes or a tomato salad.
Keep the tin at room temperature, away from heat and moisture. Once opened, transfer the sardines to an airtight container, keep them between 0 and 4 °C and eat them within 48 hours. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
