Description
This 40 g bag holds dried morels of the Morchella conica species, the conical morel with a pointed, dark brown cap ridged with long pits. G. Detou packs them in Jumbo size: large whole caps, sold without stems, as the photo of the bag shows. Drying concentrates their woodland scent and their earthy, slightly smoky taste, and they regain volume once cooked.
The label gives the method: wash the mushrooms carefully and rinse them several times to remove the sand caught in the pits, then cook them for 5 minutes in boiling water at 100 °C before adding them to the recipe. Morels must always be eaten cooked. They pair with cream and vin jaune for a poularde or chicken supreme with morels, and they flavour a risotto, fresh tagliatelle, an omelette, sweetbreads or a sauce for beef fillet. The large Jumbo caps are also good for stuffing, with a duxelles or a chicken mousseline.
