Description
Sardinillas are very small sardines, Sardina pilchardus according to the maker, tinned whole in olive oil. These come from Conservas Zallo, a cannery in Bermeo in the Spanish Basque Country; the sleeve states that they are prepared in Galicia and packed by hand, 16 to 22 pieces per tin. The recipe comes down to three words: sardines, olive oil and salt. Fish makes up 75% of the contents, or 81 g drained in a 111 g tin.
Their small size changes how you use them: you eat them whole, bones and all, as they are so fine and soft. In Spain they are served as an aperitif, laid on a slice of toasted country bread rubbed with tomato, with a few drops of lemon or a mild chilli. They also top a warm potato salad, pasta with garlic and parsley, or a soft-boiled egg. Zallo suggests a sardinillas skewer and a sardine quiche on its website. Keep the oil from the tin to dress a salad or make a sauce.
